Strawberry Margarita Sorbet

Sorbet is a frozen dessert made from sweetened water flavored with iced fruit (typically juice or puree), chocolate, wine, and/or liqueur.

This can be best served when having a party or to quench the thirst during hot days.

2 cups water
1 cup sugar
4 cups fresh strawberries, hulled or 1 bag (20 oz.) frozen whole strawberries, thawed
1/3 cup fresh lime juice
1/3 cup tequila
1/4 cup Triple Sec (orange-flavored liqueur)
Fresh mint sprigs, for garnish

1. Bring water and sugar to a boil in a medium saucepan over high heat; cook, stirring, until sugar is dissolved. Remove from heat and cool completely.

2. Puree strawberries in a blender or food processor until smooth. Stir in lime juice, tequila, orange liqueur, and sugar syrup. Refrigerate until cold.

3. Freeze in an ice-cream maker according to manufacturer's directions. (Or pour mixture into a 13x9-inch pan and freeze until almost solid, 5 hours, stirring with a whisk every 1-1/2 hours. Refreeze.)

Makes 6 cups.

Looking Into Mexican Food History

Historically, Mexican food is one of the most loved cuisines amongst American eaters all over the U.S. and has spread to other countries as well. Of course, depending on the amount of "heat" or fats in a particular Mexican dish, it may cause a problem for some of the more delicate digestive tracts. And that brings us to the point of healthy eating and Mexican food.

The problem with most Mexican foods that you find north of the border is that they have been infused with too much fat and added calories. Some restaurants have turned their recipes into monstrous super sized meals with enough food to feed an entire family in each individual serving. If you look back into Mexican food history and travel into different regions of Mexico, you will find that Mexican food, cooked in most local restaurants and casas, are actually prepared with healthy ingredients.

Most Mexican food that is made in Mexico is rich in fresh vegetables. They are very healthy because these vegetables and other fresh ingredients impart vitamins and proteins into the food. It is also flavored with real spices which can also be healthy as some spices contain antioxidants. Real spices give you real flavor that is natural and therefore better for you.

Now it is certainly possible to eat that healthy Mexican food here in the States if you know how to prepare the dishes yourself and you use healthy ingredients. There may be a store near you where fresh ingredients can be easily found and purchased, that are rich in the vitamins and devoid of the items that are detrimental to good health.

Thank God for Small Blessings Like Ice Cream

The blazing heat of summer as well the frequent heat waves that racks the state has brought back the popularity of ice cream as a way to escape the heat. Not only that, it seems that sugar free and fat free ice creams are losing ground in favor of the old tasty, sweet and full ice creams we liked so much when we were kids. This is not really so surprising. With the increasing problems we are having with the economy and the increasing pressure to manage our finances, ice creams represents a cheap and effective way to chase away the blues. This is the reason why ice cream manufacturers and ice cream vendors are having a field day selling the old style ice cream with some relatively new additions like the smoothies that includes frozen custard, a variation of the old style ice cream with egg as an additional flavoring.

These relatively new ice creams production process reverts back to the old fashioned way of ice cream production which is hand mixed and home made. As always, ice creams are popular because not only are they delicious, there are also a lot of things different in the ice creams of today.

3 tablespoons instant espresso powder

1 cup heavy cream

3 ounces semisweet chocolate, chopped

Turbinado sugar, for dredging

2-1/2 cups sugar

4 beaten eggs

3 8-ounce packages cream cheese or reduced-fat cream cheese (Neufchatel), softened

1 teaspoon finely shredded lemon peel

2 tablespoons lemon juice

Inside-Out Strawberry Ice-Cream Cake

To give ice cream the right consistency for spreading, soften it at room temperature, about 30 minutes, or microwave it on high in 10-second increments, testing for softness in between. Don't overdo it: You want it spreadable, not soupy!
